Ingredients

  • Kimchi - 200 grams
  • Pork belly, cubed - 150 grams
  • Tofu, firm, cubed - 100 grams
  • Korean chili flakes (gochugaru) - 1 tablespoon
  • Garlic, minced - 2 cloves
  • Ginger, minced - 1 teaspoon
  • Green onions, chopped - 2 stalks
  • Chicken or beef broth - 500 ml
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium pot, heat the sesame oil over medium heat.
  2. Add the cubed pork belly and sauté until it starts to brown, about 5-7 minutes.
  3. Stir in the minced garlic and ginger, cooking for an additional minute until fragrant.
  4. Add the kimchi and Korean chili flakes, mixing well to combine.
  5. Pour in the chicken or beef broth and bring the mixture to a boil.
  6. Once boiling, reduce heat and let it simmer for 10 minutes.
  7. Add the cubed tofu and soy sauce, then simmer for another 5 minutes.
  8. Season with salt and black pepper to taste.
  9. Serve hot, garnished with chopped green onions.
