- Pork belly, cubed - 150 grams
- Tofu, firm, cubed - 100 grams
- Korean chili flakes (gochugaru) - 1 tablespoon
- Garlic, minced - 2 cloves
- Ginger, minced - 1 teaspoon
- Green onions, chopped - 2 stalks
- Chicken or beef broth - 500 ml
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a medium pot, heat the sesame oil over medium heat.
- Add the cubed pork belly and sauté until it starts to brown, about 5-7 minutes.
- Stir in the minced garlic and ginger, cooking for an additional minute until fragrant.
- Add the kimchi and Korean chili flakes, mixing well to combine.
- Pour in the chicken or beef broth and bring the mixture to a boil.
- Once boiling, reduce heat and let it simmer for 10 minutes.
- Add the cubed tofu and soy sauce, then simmer for another 5 minutes.
- Season with salt and black pepper to taste.
