- Kimchi - 100 grams, chopped
- Almond flour - 50 grams
- Eggs - 2 large
- Green onion - 2 stalks, finely chopped
- Garlic powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Coconut oil - 2 tablespoons (for frying)
Steps
- In a mixing bowl, combine the chopped kimchi, almond flour, eggs, chopped green onion, garlic powder, salt, and black pepper. Mix until well combined.
- Heat 1 tablespoon of coconut oil in a non-stick skillet over medium heat.
- Spoon half of the batter into the skillet, spreading it out into a round pancake shape, about 1/2 inch thick.
- Cook for 3-4 minutes until the bottom is golden brown, then flip and cook for another 3-4 minutes on the other side.
- Repeat with the remaining batter, adding the remaining tablespoon of coconut oil to the skillet if needed.
- Once cooked, remove the pancakes from the skillet and let them cool slightly before slicing into wedges.
