Ingredients

  • Kimchi - 100 grams, chopped
  • Almond flour - 50 grams
  • Eggs - 2 large
  • Green onion - 2 stalks, finely chopped
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Coconut oil - 2 tablespoons (for frying)

Steps

  1. In a mixing bowl, combine the chopped kimchi, almond flour, eggs, chopped green onion, garlic powder, salt, and black pepper. Mix until well combined.
  2. Heat 1 tablespoon of coconut oil in a non-stick skillet over medium heat.
  3. Spoon half of the batter into the skillet, spreading it out into a round pancake shape, about 1/2 inch thick.
  4. Cook for 3-4 minutes until the bottom is golden brown, then flip and cook for another 3-4 minutes on the other side.
  5. Repeat with the remaining batter, adding the remaining tablespoon of coconut oil to the skillet if needed.
  6. Once cooked, remove the pancakes from the skillet and let them cool slightly before slicing into wedges.
