Keto Kimbap Rolls are a delightful low-carb twist on the traditional Korean dish, using cauliflower rice instead of rice and packed with fresh vegetables and proteins. Perfect for a brunch, these rolls are both nutritious and satisfying, bursting with flavor.

Ingredients
- Cauliflower rice - 200 grams
- Nori sheets - 2 sheets
- Cucumber - 1 small, julienned
- Carrot - 1 medium, julienned
- Spinach - 50 grams, blanched
- Egg - 1, beaten
- Sesame oil - 1 tablespoon
- Soy sauce (or coconut aminos) - 1 tablespoon
- Salt - to taste
- Black sesame seeds - 1 teaspoon
Steps
- Prepare the cauliflower rice by grating or processing cauliflower florets until they resemble rice grains.
- In a pan, heat 1 tablespoon of sesame oil over medium heat, add the cauliflower rice, and sauté for about 5-7 minutes until tender. Season with salt.
- In a separate pan, scramble the beaten egg over medium heat until cooked through, then set aside to cool.
- Blanch the spinach in boiling water for about 30 seconds, then drain and squeeze out excess water. Season lightly with salt.
- Lay a nori sheet on a bamboo sushi mat or a clean surface, and spread half of the cauliflower rice evenly over the nori, leaving the top edge free.
- Layer the blanched spinach, scrambled egg, cucumber, and carrot on top of the rice.
- Starting from the bottom, carefully roll the nori tightly over the filling, using the mat to help shape it into a roll. Seal the edge with a little water.
- Repeat the process with the second nori sheet and remaining ingredients.
- Slice the rolls into bite-sized pieces, sprinkle with black sesame seeds, and serve with soy sauce or coconut aminos for dipping.
