Ingredients

  • Cauliflower rice - 200 grams
  • Nori sheets - 2 sheets
  • Cucumber - 1 small, julienned
  • Carrot - 1 medium, julienned
  • Spinach - 50 grams, blanched
  • Egg - 1, beaten
  • Sesame oil - 1 tablespoon
  • Soy sauce (or coconut aminos) - 1 tablespoon
  • Salt - to taste
  • Black sesame seeds - 1 teaspoon

Steps

  1. Prepare the cauliflower rice by grating or processing cauliflower florets until they resemble rice grains.
  2. In a pan, heat 1 tablespoon of sesame oil over medium heat, add the cauliflower rice, and sauté for about 5-7 minutes until tender. Season with salt.
  3. In a separate pan, scramble the beaten egg over medium heat until cooked through, then set aside to cool.
  4. Blanch the spinach in boiling water for about 30 seconds, then drain and squeeze out excess water. Season lightly with salt.
  5. Lay a nori sheet on a bamboo sushi mat or a clean surface, and spread half of the cauliflower rice evenly over the nori, leaving the top edge free.
  6. Layer the blanched spinach, scrambled egg, cucumber, and carrot on top of the rice.
  7. Starting from the bottom, carefully roll the nori tightly over the filling, using the mat to help shape it into a roll. Seal the edge with a little water.
  8. Repeat the process with the second nori sheet and remaining ingredients.
  9. Slice the rolls into bite-sized pieces, sprinkle with black sesame seeds, and serve with soy sauce or coconut aminos for dipping.
