Ingredients
- Cauliflower rice - 200 grams
- Nori sheets - 2 sheets
- Eggs - 2 large, beaten
- Spinach - 50 grams, blanched
- Carrot - 50 grams, julienned
- Cucumber - 50 grams, julienned
- Sesame oil - 1 tablespoon
- Soy sauce (or tamari for gluten-free) - 1 tablespoon
- Salt - to taste
- Pepper - to taste
- Sesame seeds - 1 teaspoon
Steps
- Heat a non-stick pan over medium heat and add the beaten eggs, cooking them into a thin omelette. Once cooked, remove and slice into thin strips.
- In the same pan, lightly sauté the cauliflower rice with sesame oil for about 5 minutes until tender. Season with salt and pepper.
- Prepare your fillings: blanch the spinach in boiling water for 1 minute, julienne the carrot and cucumber, and set aside.
- On a bamboo sushi mat, lay down a sheet of nori, shiny side down. Spread an even layer of cauliflower rice over the nori, leaving a 2 cm border at the top.
- Arrange the omelette strips, spinach, carrot, and cucumber in a line across the center of the rice.
- Using the bamboo mat, carefully roll the nori away from you, creating a tight cylinder. Use a little water to seal the edge of the nori.
- Slice the kimbap into bite-sized pieces, sprinkle with sesame seeds, and serve with soy sauce for dipping.
