Ingredients

  • Almond flour - 100g
  • Zucchini - 150g
  • Egg - 1 large
  • Chicken breast - 200g, diced
  • Garlic - 2 cloves, minced
  • Ginger - 1 tsp, minced
  • Soy sauce (or tamari for gluten-free) - 2 tbsp
  • Sesame oil - 1 tsp
  • Green onions - 2 stalks, chopped
  • Chicken broth - 500ml
  • Spinach - 50g
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a bowl, combine almond flour, egg, and a pinch of salt to form a dough. If the mixture is too dry, add a little water until it holds together.
  2. Roll out the dough between two sheets of parchment paper to about 1/4 inch thickness. Cut the dough into thin strips (about 1/4 inch wide) to form the noodles.
  3. In a pot, heat sesame oil over medium heat. Add minced garlic and ginger, sautéing until fragrant (about 1 minute).
  4. Add the diced chicken breast to the pot and cook until browned and cooked through, about 5-7 minutes.
  5. Pour in the chicken broth and bring to a simmer. Stir in soy sauce, and season with salt and black pepper to taste.
  6. Add the zucchini noodles and spinach to the pot. Cook for an additional 3-4 minutes until the zucchini is tender.
  7. Add the freshly cut almond flour noodles to the broth and cook for 2-3 minutes until they float to the top and are cooked through.
  8. Garnish with chopped green onions before serving.
