Ingredients
- Almond flour - 100g
- Zucchini - 150g
- Egg - 1 large
- Chicken breast - 200g, diced
- Garlic - 2 cloves, minced
- Ginger - 1 tsp, minced
- Soy sauce (or tamari for gluten-free) - 2 tbsp
- Sesame oil - 1 tsp
- Green onions - 2 stalks, chopped
- Chicken broth - 500ml
- Spinach - 50g
- Salt - to taste
- Black pepper - to taste
Steps
- In a bowl, combine almond flour, egg, and a pinch of salt to form a dough. If the mixture is too dry, add a little water until it holds together.
- Roll out the dough between two sheets of parchment paper to about 1/4 inch thickness. Cut the dough into thin strips (about 1/4 inch wide) to form the noodles.
- In a pot, heat sesame oil over medium heat. Add minced garlic and ginger, sautéing until fragrant (about 1 minute).
- Add the diced chicken breast to the pot and cook until browned and cooked through, about 5-7 minutes.
- Pour in the chicken broth and bring to a simmer. Stir in soy sauce, and season with salt and black pepper to taste.
- Add the zucchini noodles and spinach to the pot. Cook for an additional 3-4 minutes until the zucchini is tender.
- Add the freshly cut almond flour noodles to the broth and cook for 2-3 minutes until they float to the top and are cooked through.
- Garnish with chopped green onions before serving.
