Ingredients
- Zucchini - 2 medium, spiralized
- Beef sirloin - 200 grams, thinly sliced
- Soy sauce (or coconut aminos) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Red bell pepper - 1 medium, sliced
- Carrot - 1 small, julienned
- Shiitake mushrooms - 100 grams, sliced
- Spinach - 100 grams, fresh
- Green onions - 2 stalks, chopped
- Black pepper - to taste
- Sesame seeds - 1 tablespoon, for garnish
Steps
- In a bowl, marinate the sliced beef with soy sauce, sesame oil, minced garlic, and black pepper for 15 minutes.
- While the beef is marinating, spiralize the zucchini and set aside.
- In a large skillet over medium-high heat, add a little sesame oil and sauté the marinated beef until browned, about 4-5 minutes. Remove the beef from the skillet and set aside.
- In the same skillet, add the sliced bell pepper, carrot, and mushrooms. Stir-fry for about 5 minutes until they start to soften.
- Add the spinach to the skillet and cook until wilted, about 2 minutes.
- Return the cooked beef to the skillet, then add the spiralized zucchini noodles. Toss everything together and stir-fry for an additional 2-3 minutes until the noodles are heated through.
- Taste and adjust seasoning if necessary, then garnish with chopped green onions and sesame seeds before serving.
