Ingredients

  • Zucchini - 2 medium
  • Ground pork - 200 grams
  • Fermented black soybeans - 2 tablespoons, mashed
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Onion - 1 small, finely chopped
  • Green onion - 2 stalks, sliced
  • Mushrooms - 100 grams, diced
  • Chicken broth - 100 ml
  • Black pepper - to taste
  • Red pepper flakes - optional, to taste

Steps

  1. Spiralize the zucchinis using a spiralizer or a julienne peeler to create zucchini noodles. Set aside.
  2. In a large skillet, heat the sesame oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and ginger to the skillet, stirring for about 1 minute until fragrant.
  4. Increase the heat to medium-high and add the ground pork, cooking until browned and cooked through, about 5-7 minutes.
  5. Stir in the diced mushrooms and cook for an additional 3-4 minutes until softened.
  6. Add the mashed fermented black soybeans, soy sauce, and chicken broth to the skillet. Stir well and let it simmer for 5-7 minutes until the sauce thickens slightly.
  7. Add the zucchini noodles to the skillet, tossing them in the sauce until well coated and heated through, about 2-3 minutes.
  8. Season with black pepper and, if desired, red pepper flakes for some heat. Serve hot, garnished with sliced green onions.
