- Zucchini - 2 medium
- Ground pork - 200 grams
- Fermented black soybeans - 2 tablespoons, mashed
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 3 cloves, minced
- Ginger - 1 teaspoon, minced
- Onion - 1 small, finely chopped
- Green onion - 2 stalks, sliced
- Mushrooms - 100 grams, diced
- Chicken broth - 100 ml
- Black pepper - to taste
- Red pepper flakes - optional, to taste
Steps
- Spiralize the zucchinis using a spiralizer or a julienne peeler to create zucchini noodles. Set aside.
- In a large skillet, heat the sesame oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and ginger to the skillet, stirring for about 1 minute until fragrant.
- Increase the heat to medium-high and add the ground pork, cooking until browned and cooked through, about 5-7 minutes.
- Stir in the diced mushrooms and cook for an additional 3-4 minutes until softened.
- Add the mashed fermented black soybeans, soy sauce, and chicken broth to the skillet. Stir well and let it simmer for 5-7 minutes until the sauce thickens slightly.
- Add the zucchini noodles to the skillet, tossing them in the sauce until well coated and heated through, about 2-3 minutes.
- Season with black pepper and, if desired, red pepper flakes for some heat. Serve hot, garnished with sliced green onions.
