Ingredients

  • Almond flour - 100g
  • Psyllium husk - 1 tablespoon
  • Egg - 1 large
  • Water - 100ml
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Green onions - 50g, chopped
  • Shrimp - 100g, peeled and deveined
  • Squid - 100g, cleaned and sliced
  • Olive oil - 2 tablespoons for frying
  • Soy sauce (or tamari for gluten-free) - for dipping

Steps

  1. In a medium bowl, combine almond flour, psyllium husk, salt, and black pepper.
  2. In another bowl, whisk together the egg and water until well combined.
  3. Pour the egg mixture into the dry ingredients and mix until a batter forms.
  4. Fold in the chopped green onions, shrimp, and squid until evenly distributed.
  5. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  6. Pour half of the batter into the skillet, spreading it out evenly to form a pancake.
  7. Cook for about 4-5 minutes until the bottom is golden brown, then carefully flip and cook for another 4-5 minutes.
  8. Remove the pancake from the skillet and keep warm while you repeat the process with the remaining batter.
  9. Serve hot with soy sauce or tamari for dipping.
