- Almond flour - 100g
- Psyllium husk - 1 tablespoon
- Egg - 1 large
- Water - 100ml
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Green onions - 50g, chopped
- Shrimp - 100g, peeled and deveined
- Squid - 100g, cleaned and sliced
- Olive oil - 2 tablespoons for frying
- Soy sauce (or tamari for gluten-free) - for dipping
Steps
- In a medium bowl, combine almond flour, psyllium husk, salt, and black pepper.
- In another bowl, whisk together the egg and water until well combined.
- Pour the egg mixture into the dry ingredients and mix until a batter forms.
- Fold in the chopped green onions, shrimp, and squid until evenly distributed.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
- Pour half of the batter into the skillet, spreading it out evenly to form a pancake.
- Cook for about 4-5 minutes until the bottom is golden brown, then carefully flip and cook for another 4-5 minutes.
- Remove the pancake from the skillet and keep warm while you repeat the process with the remaining batter.
- Serve hot with soy sauce or tamari for dipping.
