Ingredients

  • Almond flour - 100g
  • Coconut flour - 20g
  • Erythritol - 50g
  • Unsalted butter - 50g, softened
  • Egg - 1 large
  • Gochugaru (Korean red pepper flakes) - 1 tsp
  • Vanilla extract - 1 tsp
  • Baking powder - 1/2 tsp
  • Salt - 1/4 tsp

Steps

  1. Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, gochugaru, and salt.
  3. In another bowl, cream the softened butter until smooth, then add the egg and vanilla extract, mixing until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until a dough forms.
  5. Scoop small portions of dough (about 1 tablespoon each) onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Flatten each cookie slightly with your fingers or the bottom of a glass.
