Ingredients

  • Nori sheets - 4 sheets
  • Cauliflower rice - 200 grams
  • Cucumber - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Avocado - 1 medium, sliced
  • Eggs - 2 large, beaten
  • Soy sauce (or tamari for gluten-free) - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Black sesame seeds - 1 tablespoon

Steps

  1. Prepare the cauliflower rice by grating cauliflower or using a food processor to achieve a rice-like texture.
  2. In a pan, heat 1 teaspoon of sesame oil over medium heat, add the cauliflower rice, and stir-fry for about 5-7 minutes until tender. Season with a pinch of salt and set aside to cool.
  3. In the same pan, scramble the beaten eggs until fully cooked. Set aside.
  4. Place a nori sheet shiny side down on a bamboo sushi mat or a clean surface.
  5. Spread a thin layer of cauliflower rice (about 50 grams) evenly over the nori, leaving a 2 cm border at the top edge.
  6. Arrange a few slices of cucumber, carrot, avocado, and scrambled eggs in a line across the center of the rice.
  7. Carefully lift the edge of the mat and roll the nori away from you, tucking it tightly around the filling. Continue rolling until you reach the border, then use a little water to seal the edge.
  8. Repeat the process with the remaining nori sheets and filling ingredients.
  9. Using a sharp knife, slice each roll into bite-sized pieces, and sprinkle with black sesame seeds before serving.
