Ingredients
- Nori sheets - 4 sheets
- Cauliflower rice - 200 grams
- Cucumber - 1 medium, julienned
- Carrot - 1 medium, julienned
- Avocado - 1 medium, sliced
- Eggs - 2 large, beaten
- Soy sauce (or tamari for gluten-free) - 1 tablespoon
- Sesame oil - 1 teaspoon
- Salt - to taste
- Black sesame seeds - 1 tablespoon
Steps
- Prepare the cauliflower rice by grating cauliflower or using a food processor to achieve a rice-like texture.
- In a pan, heat 1 teaspoon of sesame oil over medium heat, add the cauliflower rice, and stir-fry for about 5-7 minutes until tender. Season with a pinch of salt and set aside to cool.
- In the same pan, scramble the beaten eggs until fully cooked. Set aside.
- Place a nori sheet shiny side down on a bamboo sushi mat or a clean surface.
- Spread a thin layer of cauliflower rice (about 50 grams) evenly over the nori, leaving a 2 cm border at the top edge.
- Arrange a few slices of cucumber, carrot, avocado, and scrambled eggs in a line across the center of the rice.
- Carefully lift the edge of the mat and roll the nori away from you, tucking it tightly around the filling. Continue rolling until you reach the border, then use a little water to seal the edge.
- Repeat the process with the remaining nori sheets and filling ingredients.
- Using a sharp knife, slice each roll into bite-sized pieces, and sprinkle with black sesame seeds before serving.
