Ingredients

  • Beef short ribs - 500 grams
  • Water - 1.5 liters
  • Garlic - 4 cloves, minced
  • Ginger - 1 tablespoon, grated
  • Green onions - 2 stalks, chopped (white and green parts separated)
  • Korean radish (mu) - 100 grams, cubed
  • Soy sauce (low sodium) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Salt - to taste
  • Mushrooms (shiitake or enoki) - 100 grams, sliced
  • Cauliflower rice - 200 grams (optional, for serving)

Steps

  1. In a large pot, add the beef short ribs and cover with water. Bring to a boil, then reduce heat and simmer for 10 minutes. This helps to remove impurities.
  2. Drain the beef and rinse under cold water to clean. Set aside.
  3. In the same pot, add 1.5 liters of fresh water, the cleaned beef short ribs, minced garlic, grated ginger, and chopped white parts of the green onions. Bring to a boil again.
  4. Reduce heat to low and simmer for about 1.5 hours, or until the meat is tender.
  5. Add the cubed Korean radish and soy sauce to the pot. Continue to simmer for another 20 minutes.
  6. Stir in the sliced mushrooms and sesame oil, and cook for an additional 5 minutes.
  7. Season with salt and black pepper to taste. Serve hot, garnished with the green parts of the chopped green onions.
  8. Optionally, serve with cauliflower rice for a complete meal.
