Ingredients
- Beef short ribs - 500 grams
- Water - 1.5 liters
- Garlic - 4 cloves, minced
- Ginger - 1 tablespoon, grated
- Green onions - 2 stalks, chopped (white and green parts separated)
- Korean radish (mu) - 100 grams, cubed
- Soy sauce (low sodium) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Salt - to taste
- Mushrooms (shiitake or enoki) - 100 grams, sliced
- Cauliflower rice - 200 grams (optional, for serving)
Steps
- In a large pot, add the beef short ribs and cover with water. Bring to a boil, then reduce heat and simmer for 10 minutes. This helps to remove impurities.
- Drain the beef and rinse under cold water to clean. Set aside.
- In the same pot, add 1.5 liters of fresh water, the cleaned beef short ribs, minced garlic, grated ginger, and chopped white parts of the green onions. Bring to a boil again.
- Reduce heat to low and simmer for about 1.5 hours, or until the meat is tender.
- Add the cubed Korean radish and soy sauce to the pot. Continue to simmer for another 20 minutes.
- Stir in the sliced mushrooms and sesame oil, and cook for an additional 5 minutes.
- Season with salt and black pepper to taste. Serve hot, garnished with the green parts of the chopped green onions.
- Optionally, serve with cauliflower rice for a complete meal.
