Ingredients
- Beef short ribs - 500 grams
- Water - 1.5 liters
- Garlic - 4 cloves, minced
- Ginger - 1 inch, sliced
- Daikon radish - 100 grams, cut into chunks
- Green onions - 2 stalks, chopped
- Soy sauce (low sodium) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Mushrooms (shiitake or enoki) - 100 grams, sliced
Steps
- In a large pot, add the beef short ribs and cover them with water. Bring to a boil and then reduce to a simmer for about 10 minutes to remove impurities.
- Drain the ribs and rinse them under cold water. Return the ribs to the pot and add 1.5 liters of fresh water, minced garlic, sliced ginger, and daikon radish.
- Bring the pot to a gentle boil, then reduce the heat to low and cover. Let it simmer for about 1.5 hours, until the ribs are tender.
- After 1.5 hours, add the soy sauce, sesame oil, sliced mushrooms, and chopped green onions to the pot. Season with salt and black pepper to taste.
- Simmer for an additional 10 minutes to allow the flavors to meld.
- Serve hot, garnished with additional green onions if desired.
