Ingredients

  • Beef short ribs - 500 grams
  • Water - 1.5 liters
  • Garlic - 4 cloves, minced
  • Ginger - 1 inch, sliced
  • Daikon radish - 100 grams, cut into chunks
  • Green onions - 2 stalks, chopped
  • Soy sauce (low sodium) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Mushrooms (shiitake or enoki) - 100 grams, sliced

Steps

  1. In a large pot, add the beef short ribs and cover them with water. Bring to a boil and then reduce to a simmer for about 10 minutes to remove impurities.
  2. Drain the ribs and rinse them under cold water. Return the ribs to the pot and add 1.5 liters of fresh water, minced garlic, sliced ginger, and daikon radish.
  3. Bring the pot to a gentle boil, then reduce the heat to low and cover. Let it simmer for about 1.5 hours, until the ribs are tender.
  4. After 1.5 hours, add the soy sauce, sesame oil, sliced mushrooms, and chopped green onions to the pot. Season with salt and black pepper to taste.
  5. Simmer for an additional 10 minutes to allow the flavors to meld.
  6. Serve hot, garnished with additional green onions if desired.
