Ingredients
- Cauliflower rice - 400 grams
- Ground beef or chicken - 200 grams
- Soy sauce (or coconut aminos) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic, minced - 2 cloves
- Carrot, julienned - 50 grams
- Zucchini, julienned - 50 grams
- Spinach - 100 grams
- Eggs - 2 large
- Green onions, chopped - 2 stalks
- Gochujang (Korean chili paste) - 1 tablespoon
- Salt - to taste
- Pepper - to taste
- Sesame seeds - for garnish
Steps
- Heat a non-stick skillet over medium heat and add the ground beef or chicken. Cook until browned, about 5-7 minutes. Add minced garlic, soy sauce, sesame oil, salt, and pepper. Mix well and set aside.
- In the same skillet, add julienned carrot and zucchini. Sauté for 3-4 minutes until slightly tender. Add spinach and cook until wilted, about 1-2 minutes. Set aside with the protein.
- In a separate pan, fry the eggs sunny-side up, or to your preference.
- In a large bowl, combine cauliflower rice and sautéed vegetables and protein. Mix well, adjusting seasoning as needed.
- To serve, heat a dolsot (stone bowl) or a regular bowl until hot. Add the cauliflower rice mixture and top with a fried egg. Drizzle with gochujang and sprinkle with sesame seeds and chopped green onions.
- Serve immediately and enjoy the sizzling effect!
