Ingredients

  • Konjac noodles - 200 grams
  • Korean chili paste (Gochujang) - 1 tablespoon
  • Soy sauce (or tamari for gluten-free) - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Garlic (minced) - 2 cloves
  • Green onions (sliced) - 2 stalks
  • Cauliflower (finely chopped) - 100 grams
  • Water - 200 milliliters
  • Red pepper flakes - 1 teaspoon
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Rinse the konjac noodles under cold water and drain well.
  2. In a medium-sized saucepan, heat sesame oil over medium heat and add minced garlic. Sauté until fragrant, about 1 minute.
  3. Add the finely chopped cauliflower to the saucepan and cook for another 3-4 minutes, stirring occasionally until slightly softened.
  4. In a bowl, mix the Korean chili paste, soy sauce, water, and red pepper flakes until well combined.
  5. Pour the sauce mixture into the saucepan and add the konjac noodles, stirring to combine.
  6. Bring the mixture to a gentle simmer and cook for an additional 5-7 minutes, allowing the noodles to absorb the flavors.
  7. Remove from heat and stir in sliced green onions.
  8. Serve hot, garnished with sesame seeds and additional green onions if desired.
