Ingredients

  • Almond flour - 100 grams
  • Coconut flour - 20 grams
  • Psyllium husk - 10 grams
  • Baking powder - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Egg - 1 large
  • Water - 120 milliliters
  • Butter - 15 grams (melted)
  • Sesame seeds - 1 tablespoon (optional for topping)

Steps

  1. Preheat the oven to 180°C (350°F) and line a small baking dish with parchment paper.
  2. In a mixing bowl, combine the almond flour, coconut flour, psyllium husk, baking powder, and salt until well mixed.
  3. In another bowl, whisk together the egg, melted butter, and water until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until a dough forms. Knead gently for a minute until the dough is cohesive.
  5. Transfer the dough to the prepared baking dish and press it out evenly into the dish, about 1-2 cm thick.
  6. Sprinkle sesame seeds on top if desired, pressing them lightly into the dough.
  7. Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown and the center is firm.
  8. Allow to cool for a few minutes before cutting into squares or rectangles for serving.
