  • Chicken thighs - 500 grams
  • Soy sauce (gluten-free) - 4 tablespoons
  • Sesame oil - 2 tablespoons
  • Garlic (minced) - 4 cloves
  • Ginger (grated) - 1 tablespoon
  • Green onions (chopped) - 2 stalks
  • Keto-friendly sweetener - 1 tablespoon
  • Water - 200 milliliters
  • Radish (sliced) - 100 grams
  • Mushrooms (shiitake or button, sliced) - 100 grams
  • Red pepper flakes - 1 teaspoon
  • Black pepper - to taste

Steps

  1. In a large bowl, combine the soy sauce, sesame oil, minced garlic, grated ginger, and keto-friendly sweetener to create the marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well-coated. Let marinate for at least 15 minutes.
  3. In a large skillet or pot, heat a little oil over medium heat. Add the marinated chicken thighs and sear on both sides until browned, about 5 minutes per side.
  4. Pour in the water and add the sliced radish and mushrooms to the skillet. Stir in the red pepper flakes and black pepper.
  5. Cover and reduce the heat to low, letting it simmer for about 25 minutes until the chicken is cooked through and tender.
  6. Garnish with chopped green onions before serving.
