Ingredients
- Chicken thighs - 400 grams, boneless and skinless
- Zucchini - 150 grams, sliced
- Cauliflower florets - 200 grams
- Red bell pepper - 100 grams, sliced
- Green onion - 2 stalks, chopped
- Garlic - 4 cloves, minced
- Gochujang (Korean chili paste) - 2 tablespoons
- Soy sauce (or tamari for gluten-free) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Olive oil - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Sesame seeds - 1 tablespoon for garnish
Steps
- Preheat the oven to 200°C (400°F).
- In a large bowl, combine the gochujang, soy sauce, sesame oil, olive oil, minced garlic, black pepper, and salt to create the marinade.
- Add the chicken thighs to the bowl and coat them well with the marinade. Let it marinate for at least 15 minutes.
- In a baking dish, arrange the sliced zucchini, cauliflower florets, and red bell pepper. Place the marinated chicken thighs on top of the vegetables.
- Sprinkle the chopped green onions over the chicken and vegetables.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the chicken is cooked through and the vegetables are tender.
- Garnish with sesame seeds before serving.
