Ingredients

  • Chicken thighs - 400 grams, boneless and skinless
  • Zucchini - 150 grams, sliced
  • Cauliflower florets - 200 grams
  • Red bell pepper - 100 grams, sliced
  • Green onion - 2 stalks, chopped
  • Garlic - 4 cloves, minced
  • Gochujang (Korean chili paste) - 2 tablespoons
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Sesame seeds - 1 tablespoon for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine the gochujang, soy sauce, sesame oil, olive oil, minced garlic, black pepper, and salt to create the marinade.
  3. Add the chicken thighs to the bowl and coat them well with the marinade. Let it marinate for at least 15 minutes.
  4. In a baking dish, arrange the sliced zucchini, cauliflower florets, and red bell pepper. Place the marinated chicken thighs on top of the vegetables.
  5. Sprinkle the chopped green onions over the chicken and vegetables.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  7. Remove the foil and bake for an additional 10 minutes, or until the chicken is cooked through and the vegetables are tender.
  8. Garnish with sesame seeds before serving.
