Ingredients
- Chicken thighs - 300 grams, boneless and skinless
- Chicken broth - 500 ml, low-sodium
- Water - 200 ml
- Garlic - 3 cloves, minced
- Ginger - 1 teaspoon, minced
- Green onions - 2 stalks, chopped
- Soy sauce - 2 tablespoons, low-sodium
- Sesame oil - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Salt - to taste
- Shirataki rice - 200 grams, rinsed and drained
- Spinach - 100 grams, fresh
Steps
- In a pot, heat the sesame oil over medium heat. Add the minced garlic and ginger, sautéing until fragrant, about 1 minute.
- Add the chicken thighs to the pot and brown them on both sides for about 5 minutes.
- Pour in the chicken broth and water, then bring to a boil. Reduce heat and let it simmer for 15 minutes until the chicken is cooked through.
- Remove the chicken from the pot, shred it into bite-sized pieces, and return it to the pot.
- Stir in the soy sauce, black pepper, and salt to taste. Add the rinsed shirataki rice and fresh spinach, cooking for another 5 minutes until heated through.
- Serve hot, garnished with chopped green onions.
