Ingredients

  • Chicken thighs - 300 grams, boneless and skinless
  • Chicken broth - 500 ml, low-sodium
  • Water - 200 ml
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Green onions - 2 stalks, chopped
  • Soy sauce - 2 tablespoons, low-sodium
  • Sesame oil - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Salt - to taste
  • Shirataki rice - 200 grams, rinsed and drained
  • Spinach - 100 grams, fresh

Steps

  1. In a pot, heat the sesame oil over medium heat. Add the minced garlic and ginger, sautéing until fragrant, about 1 minute.
  2. Add the chicken thighs to the pot and brown them on both sides for about 5 minutes.
  3. Pour in the chicken broth and water, then bring to a boil. Reduce heat and let it simmer for 15 minutes until the chicken is cooked through.
  4. Remove the chicken from the pot, shred it into bite-sized pieces, and return it to the pot.
  5. Stir in the soy sauce, black pepper, and salt to taste. Add the rinsed shirataki rice and fresh spinach, cooking for another 5 minutes until heated through.
  6. Serve hot, garnished with chopped green onions.
