  • Garlic - 1 clove, minced
  • Sesame seeds - 1 tablespoon
  • Green onions - 2, finely chopped
  • Cucumber - 1 small, julienned
  • Carrot - 1 small, julienned (optional, for color)
  • Salt - to taste

Steps

  1. Spiralize the zucchinis using a spiralizer or a julienne peeler to create 'noodles'.
  2. In a large bowl, combine soy sauce, sesame oil, rice vinegar, sriracha, minced garlic, and a pinch of salt to create the sauce.
  3. Add the zucchini noodles to the sauce and toss until well coated.
  4. Incorporate the julienned cucumber and carrot into the noodle mixture.
