Ingredients

  • Beef brisket - 150 grams, thinly sliced
  • Pork belly - 150 grams, thinly sliced
  • Shiitake mushrooms - 100 grams, sliced
  • Kimchi - 100 grams, chopped
  • Korean radish (mu) - 50 grams, sliced
  • Green onions - 2, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Soy sauce - 2 tablespoons
  • Gochujang (Korean chili paste) - 1 tablespoon
  • Beef broth - 500 ml
  • Water - 200 ml
  • Sesame oil - 1 tablespoon
  • Zucchini - 100 grams, sliced
  • Cauliflower rice - 200 grams
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, heat the sesame oil over medium heat. Add the minced garlic and ginger, sautéing until fragrant.
  2. Add the beef brisket and pork belly slices to the pot. Cook until the meats are browned on all sides.
  3. Stir in the chopped kimchi, shiitake mushrooms, and Korean radish. Cook for another 5 minutes until the vegetables are slightly softened.
  4. Add the soy sauce, gochujang, beef broth, and water to the pot. Bring the mixture to a simmer.
  5. Add the zucchini and cauliflower rice, stirring well. Allow the stew to simmer for 10-15 minutes until all ingredients are cooked through.
  6. Season with salt and black pepper to taste. Stir in the chopped green onions just before serving.
