- Beef brisket - 150 grams, thinly sliced
- Pork belly - 150 grams, thinly sliced
- Shiitake mushrooms - 100 grams, sliced
- Kimchi - 100 grams, chopped
- Korean radish (mu) - 50 grams, sliced
- Green onions - 2, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Soy sauce - 2 tablespoons
- Gochujang (Korean chili paste) - 1 tablespoon
- Beef broth - 500 ml
- Water - 200 ml
- Sesame oil - 1 tablespoon
- Zucchini - 100 grams, sliced
- Cauliflower rice - 200 grams
- Salt - to taste
- Black pepper - to taste
Steps
- In a large pot, heat the sesame oil over medium heat. Add the minced garlic and ginger, sautéing until fragrant.
- Add the beef brisket and pork belly slices to the pot. Cook until the meats are browned on all sides.
- Stir in the chopped kimchi, shiitake mushrooms, and Korean radish. Cook for another 5 minutes until the vegetables are slightly softened.
- Add the soy sauce, gochujang, beef broth, and water to the pot. Bring the mixture to a simmer.
- Add the zucchini and cauliflower rice, stirring well. Allow the stew to simmer for 10-15 minutes until all ingredients are cooked through.
- Season with salt and black pepper to taste. Stir in the chopped green onions just before serving.
