Ingredients

  • Korean radish (mu) - 300 grams, peeled and cut into matchsticks

  • Garlic - 2 cloves, minced
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Water - 100 milliliters
  • Erythritol (or preferred keto sweetener) - 1 teaspoon
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon, for garnish

Steps

  1. In a medium-sized pan, heat the sesame oil over medium heat.
  2. Add the minced garlic and grated ginger, sautéing for 1-2 minutes until fragrant.
  3. Add the radish matchsticks to the pan and stir-fry for another 3-4 minutes until slightly tender.
  4. Pour in the soy sauce and water, then add the erythritol. Stir to combine all ingredients.
  5. Cover the pan and reduce the heat to low, allowing the radishes to braise for 20 minutes, stirring occasionally.
  6. Once the radishes are tender and the liquid has reduced slightly, remove from heat.
  7. Garnish with chopped green onions and sesame seeds before serving.
