Ingredients

  • Coconut milk - 400 ml
  • Water - 200 ml
  • Erythritol sweetener - 3 tablespoons
  • Gelatin powder - 1 tablespoon
  • Unsweetened cocoa powder - 1 tablespoon
  • Shredded unsweetened coconut - 50 grams
  • Chopped nuts (almonds or walnuts) - 30 grams
  • Sugar-free chocolate chips - 30 grams
  • Fresh berries (strawberries or blueberries) - 50 grams

Steps

  1. In a saucepan, combine coconut milk, water, and erythritol. Heat over low heat until the sweetener dissolves completely.
  2. Sprinkle the gelatin powder over the mixture and stir until fully dissolved. Remove from heat and let it cool slightly.
  3. Pour the mixture into a shallow dish and freeze for about 4 hours, stirring every hour to create a fluffy ice texture.
  4. Once frozen, scrape the mixture with a fork to create fluffy ice shavings.
  5. To assemble, place a generous portion of the fluffy ice in a bowl.
  6. Top with shredded coconut, chopped nuts, sugar-free chocolate chips, and fresh berries.
