- Coconut milk - 400 ml
- Water - 200 ml
- Erythritol sweetener - 3 tablespoons
- Gelatin powder - 1 tablespoon
- Unsweetened cocoa powder - 1 tablespoon
- Shredded unsweetened coconut - 50 grams
- Chopped nuts (almonds or walnuts) - 30 grams
- Sugar-free chocolate chips - 30 grams
- Fresh berries (strawberries or blueberries) - 50 grams
Steps
- In a saucepan, combine coconut milk, water, and erythritol. Heat over low heat until the sweetener dissolves completely.
- Sprinkle the gelatin powder over the mixture and stir until fully dissolved. Remove from heat and let it cool slightly.
- Pour the mixture into a shallow dish and freeze for about 4 hours, stirring every hour to create a fluffy ice texture.
- Once frozen, scrape the mixture with a fork to create fluffy ice shavings.
