Ingredients

  • Cauliflower Rice - 300 grams
  • Ground Beef - 200 grams
  • Soy Sauce (or Tamari for gluten-free) - 2 tablespoons
  • Sesame Oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Zucchini - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Spinach - 100 grams
  • Eggs - 2 large
  • Green Onion - 2 stalks, sliced
  • Sesame Seeds - 1 tablespoon
  • Salt - to taste
  • Black Pepper - to taste

Steps

  1. Heat a large skillet over medium heat and add sesame oil.
  2. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add ground beef to the skillet, season with soy sauce, salt, and black pepper, and cook until browned, about 5-7 minutes. Remove from skillet and set aside.
  4. In the same skillet, add zucchini and carrot. Sauté for 3-4 minutes until they are slightly tender. Add spinach and cook until wilted, about 2 more minutes. Remove vegetables and set aside.
  5. In a separate pan, fry the eggs sunny-side up until the whites are set but yolks remain runny, about 3-4 minutes.
  6. To assemble the bowls, divide cauliflower rice between two bowls. Top with the sautéed vegetables, ground beef, and a fried egg on each bowl.
  7. Sprinkle with sliced green onions and sesame seeds before serving.
