Ingredients
- Cauliflower Rice - 300 grams
- Ground Beef - 200 grams
- Soy Sauce (or Tamari for gluten-free) - 2 tablespoons
- Sesame Oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Zucchini - 1 medium, julienned
- Carrot - 1 medium, julienned
- Spinach - 100 grams
- Eggs - 2 large
- Green Onion - 2 stalks, sliced
- Sesame Seeds - 1 tablespoon
- Salt - to taste
- Black Pepper - to taste
Steps
- Heat a large skillet over medium heat and add sesame oil.
- Add minced garlic and sauté for about 1 minute until fragrant.
- Add ground beef to the skillet, season with soy sauce, salt, and black pepper, and cook until browned, about 5-7 minutes. Remove from skillet and set aside.
- In the same skillet, add zucchini and carrot. Sauté for 3-4 minutes until they are slightly tender. Add spinach and cook until wilted, about 2 more minutes. Remove vegetables and set aside.
- In a separate pan, fry the eggs sunny-side up until the whites are set but yolks remain runny, about 3-4 minutes.
- To assemble the bowls, divide cauliflower rice between two bowls. Top with the sautéed vegetables, ground beef, and a fried egg on each bowl.
- Sprinkle with sliced green onions and sesame seeds before serving.
