Ingredients

  • Zucchini - 2 medium
  • Cucumber - 1 medium
  • Carrot - 1 medium
  • Soy sauce (or tamari) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Gojujang (Korean chili paste) - 1 teaspoon
  • Rice vinegar - 1 tablespoon
  • Erythritol (or sweetener of choice) - 1 teaspoon
  • Sesame seeds - 1 tablespoon
  • Green onion - 2 stalks, chopped
  • Egg - 2, soft boiled
  • Salt - to taste

Steps

  1. Spiralize the zucchini, cucumber, and carrot using a spiralizer or julienne peeler to create 'noodles'.
  2. In a small bowl, mix the soy sauce, sesame oil, gochujang, rice vinegar, and erythritol to create the sauce.
  3. Heat a non-stick skillet over medium heat and briefly sauté the spiralized vegetables for 2-3 minutes until just tender but still crispy.
  4. Remove the skillet from heat and toss the sautéed vegetables with the sauce until well coated.
  5. Serve the vegetable noodles in two bowls, topping each with a soft-boiled egg, sesame seeds, and chopped green onions.
