- Rice vinegar - 1 tablespoon
- Erythritol (or sweetener of choice) - 1 teaspoon
- Sesame seeds - 1 tablespoon
- Green onion - 2 stalks, chopped
- Egg - 2, soft boiled
- Salt - to taste
Steps
- Spiralize the zucchini, cucumber, and carrot using a spiralizer or julienne peeler to create 'noodles'.
- In a small bowl, mix the soy sauce, sesame oil, gochujang, rice vinegar, and erythritol to create the sauce.
