Ingredients

  • Rice vinegar - 1 teaspoon
  • Garlic (minced) - 1 clove
  • Sesame seeds - 1 tablespoon
  • Salt - to taste
  • Red pepper flakes - 1/2 teaspoon (optional)

Steps

  1. Wash the fresh spinach under cold water and drain well.
  2. In a large pot, bring water to a boil and add a pinch of salt.
  3. Add the spinach to the boiling water and blanch for about 1-2 minutes until wilted.
  4. Immediately transfer the spinach to an ice bath to stop the cooking process, then drain and squeeze out excess water.
  5. In a mixing bowl, combine the sesame oil, soy sauce, rice vinegar, minced garlic, and red pepper flakes (if using).
  6. Add the blanched spinach to the bowl and toss to coat evenly with the dressing.
  7. Sprinkle with sesame seeds and mix gently.
