Ingredients

  • Firm tofu - 300 grams
  • Olive oil - 2 tablespoons
  • Soy sauce (low-sodium) - 2 tablespoons
  • Gochujang (Korean chili paste) - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Spinach - 200 grams, fresh
  • Sesame oil - 1 teaspoon
  • Sesame seeds - 1 tablespoon
  • Mushrooms (shiitake or button) - 150 grams, sliced
  • Green onions - 2, chopped
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Press the firm tofu to remove excess moisture, then cut it into 1-inch cubes.
  3. In a mixing bowl, combine olive oil, soy sauce, gochujang, and minced garlic. Toss the tofu cubes in this mixture until well coated.
  4. Spread the marinated tofu on a baking sheet lined with parchment paper and bake for 20 minutes, flipping halfway through.
  5. While the tofu is baking, bring a pot of water to a boil and blanch the spinach for 1-2 minutes until wilted. Drain and rinse under cold water. Squeeze out excess water and chop.
  6. In a pan, heat sesame oil over medium heat, add the blanched spinach, sesame seeds, salt, and pepper. Sauté for 2-3 minutes and set aside.
  7. In the same pan, add a little more sesame oil if needed and sauté the sliced mushrooms until golden brown, about 5 minutes. Season with salt and pepper.
  8. Once the tofu is done baking, assemble the platter by placing the baked tofu, sautéed spinach, and garlic mushrooms together. Garnish with chopped green onions.
