Ingredients
- Firm tofu - 300 grams
- Olive oil - 2 tablespoons
- Soy sauce (low-sodium) - 2 tablespoons
- Gochujang (Korean chili paste) - 1 tablespoon
- Garlic - 2 cloves, minced
- Spinach - 200 grams, fresh
- Sesame oil - 1 teaspoon
- Sesame seeds - 1 tablespoon
- Mushrooms (shiitake or button) - 150 grams, sliced
- Green onions - 2, chopped
- Salt - to taste
- Pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- Press the firm tofu to remove excess moisture, then cut it into 1-inch cubes.
- In a mixing bowl, combine olive oil, soy sauce, gochujang, and minced garlic. Toss the tofu cubes in this mixture until well coated.
- Spread the marinated tofu on a baking sheet lined with parchment paper and bake for 20 minutes, flipping halfway through.
- While the tofu is baking, bring a pot of water to a boil and blanch the spinach for 1-2 minutes until wilted. Drain and rinse under cold water. Squeeze out excess water and chop.
- In a pan, heat sesame oil over medium heat, add the blanched spinach, sesame seeds, salt, and pepper. Sauté for 2-3 minutes and set aside.
- In the same pan, add a little more sesame oil if needed and sauté the sliced mushrooms until golden brown, about 5 minutes. Season with salt and pepper.
- Once the tofu is done baking, assemble the platter by placing the baked tofu, sautéed spinach, and garlic mushrooms together. Garnish with chopped green onions.
