  • Pork belly - 400 grams

  • Sesame oil - 1 tablespoon
  • Garlic - 4 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Red pepper flakes - 1 teaspoon
  • Green onion - 2 stalks, chopped
  • Black pepper - 1/2 teaspoon
  • Lettuce leaves - for serving
  • Kimchi - for serving (optional)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, combine soy sauce, sesame oil, minced garlic, grated ginger, red pepper flakes, chopped green onion, and black pepper to make the marinade.
  3. Slice the pork belly into thick pieces and place them in the marinade, ensuring they are well coated. Let them marinate for at least 15 minutes.
  4. Line a baking tray with parchment paper and arrange the marinated pork belly slices on it in a single layer.
  5. Bake in the preheated oven for 25-30 minutes, or until the pork belly is crispy and golden brown, flipping halfway through.
  6. Once cooked, remove from the oven and let it rest for a few minutes before serving.
  7. Serve the baked samgyeopsal wrapped in lettuce leaves with a side of kimchi, if desired.
