Ingredients

  • Pork belly - 400 grams
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Keto-friendly sweetener (like erythritol) - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Korean red pepper flakes (gochugaru) - 1 teaspoon
  • Green onions - 2 stalks, chopped (for garnish)
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. Preheat the oven to 160°C (320°F).
  2. In a mixing bowl, combine the soy sauce, sesame oil, minced garlic, grated ginger, keto-friendly sweetener, black pepper, and Korean red pepper flakes to create the marinade.
  3. Cut the pork belly into 2 cm cubes and add them to the marinade, ensuring all pieces are well-coated. Let it marinate for at least 30 minutes, or overnight in the refrigerator for better flavor.
  4. Place the marinated pork belly in a single layer on a baking tray lined with parchment paper.
  5. Bake in the preheated oven for 60 minutes, turning the pieces halfway through for even cooking.
  6. After 60 minutes, increase the temperature to 220°C (428°F) and bake for an additional 10 minutes to achieve a crispy texture.
  7. Once done, remove from the oven, let it rest for a few minutes, and garnish with chopped green onions and sesame seeds before serving.
