Ingredients
- Beef short ribs - 500 grams
- Soy sauce (low sodium) - 60 ml
- Erythritol or monk fruit sweetener - 2 tablespoons
- Sesame oil - 2 tablespoons
- Garlic (minced) - 3 cloves
- Ginger (grated) - 1 teaspoon
- Green onions (chopped) - 2 stalks
- Black pepper - 1 teaspoon
- Sesame seeds - 1 tablespoon
- Cauliflower (for serving) - 200 grams
Steps
- Preheat the oven to 160°C (320°F).
- In a bowl, combine soy sauce, erythritol, sesame oil, minced garlic, grated ginger, black pepper, and half of the chopped green onions to create the marinade.
- Place the beef short ribs in a large zip-top bag or shallow dish and pour the marinade over the ribs. Ensure all pieces are well-coated and marinate in the refrigerator for at least 1 hour, preferably overnight.
- Remove the marinated short ribs from the refrigerator and allow them to sit at room temperature for about 15 minutes.
- Arrange the ribs in a single layer in a baking dish and pour any remaining marinade over them.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 2 hours.
- After 2 hours, remove the foil and increase the oven temperature to 220°C (428°F). Bake for an additional 15-20 minutes, or until the ribs are caramelized and tender.
- While the ribs are baking, steam the cauliflower until tender, about 10 minutes. Mash or serve as is.
- Once the ribs are done, remove them from the oven and let them rest for about 5 minutes before serving.
- Serve the baked galbi with the mashed or steamed cauliflower, topped with sesame seeds and the remaining chopped green onions.
