Ingredients

  • Beef short ribs - 500 grams
  • Soy sauce (low sodium) - 60 ml
  • Erythritol or monk fruit sweetener - 2 tablespoons
  • Sesame oil - 2 tablespoons
  • Garlic (minced) - 3 cloves
  • Ginger (grated) - 1 teaspoon
  • Green onions (chopped) - 2 stalks
  • Black pepper - 1 teaspoon
  • Sesame seeds - 1 tablespoon
  • Cauliflower (for serving) - 200 grams

Steps

  1. Preheat the oven to 160°C (320°F).
  2. In a bowl, combine soy sauce, erythritol, sesame oil, minced garlic, grated ginger, black pepper, and half of the chopped green onions to create the marinade.
  3. Place the beef short ribs in a large zip-top bag or shallow dish and pour the marinade over the ribs. Ensure all pieces are well-coated and marinate in the refrigerator for at least 1 hour, preferably overnight.
  4. Remove the marinated short ribs from the refrigerator and allow them to sit at room temperature for about 15 minutes.
  5. Arrange the ribs in a single layer in a baking dish and pour any remaining marinade over them.
  6. Cover the baking dish with aluminum foil and bake in the preheated oven for 2 hours.
  7. After 2 hours, remove the foil and increase the oven temperature to 220°C (428°F). Bake for an additional 15-20 minutes, or until the ribs are caramelized and tender.
  8. While the ribs are baking, steam the cauliflower until tender, about 10 minutes. Mash or serve as is.
  9. Once the ribs are done, remove them from the oven and let them rest for about 5 minutes before serving.
  10. Serve the baked galbi with the mashed or steamed cauliflower, topped with sesame seeds and the remaining chopped green onions.
