Ingredients

  • Cauliflower - 300 grams, cut into florets
  • Kimchi - 100 grams, chopped
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, chopped
  • Soy sauce (or coconut aminos for keto) - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Cheddar cheese - 50 grams, grated
  • Sesame seeds - 1 tablespoon, for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large mixing bowl, toss the cauliflower florets with olive oil, minced garlic, grated ginger, and soy sauce until evenly coated.
  3. Spread the cauliflower mixture onto a baking sheet lined with parchment paper and roast in the preheated oven for 15 minutes, or until tender and slightly golden.
