- Almond flour - 100g
- Coconut flour - 30g
- Baking powder - 1 tsp
- Erythritol - 50g
- Eggs - 3 large
- Unsweetened almond milk - 60ml
- Vanilla extract - 1 tsp
- Pinch of salt - 1
Steps
- Preheat the steamer or a pot with a steaming rack to medium heat.
- In a mixing bowl, combine the almond flour, coconut flour, baking powder, erythritol, and salt.
- In a separate bowl, whisk the eggs, almond milk, and vanilla extract together until well combined.
- Gradually add the wet ingredients to the dry ingredients, mixing until smooth and no lumps remain.
- Grease a small cake pan or heatproof bowl with coconut oil and pour the batter into it.
- Cover the cake pan with aluminum foil to prevent water from dripping onto the batter.
- Place the pan in the steamer and steam for about 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Remove from the steamer, let it cool for a few minutes, then slice and serve.
