Ingredients

  • Almond flour - 100g
  • Coconut flour - 30g
  • Baking powder - 1 tsp
  • Erythritol - 50g
  • Eggs - 3 large
  • Unsweetened almond milk - 60ml
  • Vanilla extract - 1 tsp
  • Pinch of salt - 1

Steps

  1. Preheat the steamer or a pot with a steaming rack to medium heat.
  2. In a mixing bowl, combine the almond flour, coconut flour, baking powder, erythritol, and salt.
  3. In a separate bowl, whisk the eggs, almond milk, and vanilla extract together until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until smooth and no lumps remain.
  5. Grease a small cake pan or heatproof bowl with coconut oil and pour the batter into it.
  6. Cover the cake pan with aluminum foil to prevent water from dripping onto the batter.
  7. Place the pan in the steamer and steam for about 25-30 minutes or until a toothpick inserted into the center comes out clean.
  8. Remove from the steamer, let it cool for a few minutes, then slice and serve.
