Ingredients

  • Short-grain rice - 1 cup (200g)
  • Water - 4 cups (1 liter)
  • Salt - 1/2 teaspoon
  • Sesame oil - 1 tablespoon
  • Green onion - 2, finely chopped
  • Ginger - 1 teaspoon, grated
  • Chicken breast - 100g, cooked and shredded (optional)
  • Egg - 1, for garnish (optional)
  • Toasted sesame seeds - 1 tablespoon, for garnish (optional)

Steps

  1. Rinse the short-grain rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. Drain the soaked rice and place it in a pot with 4 cups of fresh water.
  3. Bring the water to a boil over medium heat, then reduce to low heat and simmer for about 30 minutes, stirring occasionally to prevent sticking.
  4. Add salt, sesame oil, grated ginger, and shredded chicken (if using) to the porridge, stirring well to combine.
  5. Continue to simmer for an additional 5-10 minutes until the porridge reaches your desired consistency.
  6. Serve the Juk hot, garnished with chopped green onions, a soft-boiled egg, and toasted sesame seeds if desired.
