- Korean radish (mu) - 100g, diced
- Zucchini - 100g, sliced
- Mushrooms (shiitake or enoki) - 100g, sliced
- Tofu (firm) - 150g, cubed
- Green onions - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Gochugaru (Korean red pepper flakes) - 1 tablespoon
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Water - 500ml
- Salt - to taste
- Black pepper - to taste
Steps
- In a medium pot, heat the sesame oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Add the diced Korean radish and zucchini to the pot, stirring occasionally for about 5 minutes until they start to soften.
- Pour in the water and bring the mixture to a boil.
- Once boiling, add the sliced mushrooms, cubed tofu, gochugaru, soy sauce, and season with salt and black pepper to taste.
- Reduce the heat to a simmer and cook for an additional 10-15 minutes, allowing the flavors to meld and the vegetables to become tender.
- Lastly, sprinkle the chopped green onions on top before serving hot.
