Ingredients

  • Korean radish (mu) - 100g, diced
  • Zucchini - 100g, sliced
  • Mushrooms (shiitake or enoki) - 100g, sliced
  • Tofu (firm) - 150g, cubed
  • Green onions - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Gochugaru (Korean red pepper flakes) - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Water - 500ml
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a medium pot, heat the sesame oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  2. Add the diced Korean radish and zucchini to the pot, stirring occasionally for about 5 minutes until they start to soften.
  3. Pour in the water and bring the mixture to a boil.
  4. Once boiling, add the sliced mushrooms, cubed tofu, gochugaru, soy sauce, and season with salt and black pepper to taste.
  5. Reduce the heat to a simmer and cook for an additional 10-15 minutes, allowing the flavors to meld and the vegetables to become tender.
  6. Lastly, sprinkle the chopped green onions on top before serving hot.
