- Korean wheat noodles - 150 grams
- Shrimp - 100 grams, peeled and deveined
- Squid - 100 grams, cleaned and sliced
- Mussels - 100 grams, cleaned
- Vegetable oil - 1 tablespoon
- Garlic - 3 cloves, minced
- Ginger - 1 tablespoon, minced
- Green onion - 2 stalks, chopped
- Carrot - 1 small, julienned
- Zucchini - 1 small, julienned
- Red bell pepper - 1/2, sliced
- Korean chili powder (gochugaru) - 2 tablespoons
- Soy sauce - 1 tablespoon
- Fish sauce - 1 tablespoon
- Chicken or vegetable broth - 500 ml
- Salt - to taste
- Black pepper - to taste
- Sesame oil - 1 teaspoon
Steps
- Cook the Korean wheat noodles according to package instructions, drain, and set aside.
- In a large pot, heat the vegetable oil over medium heat and add the minced garlic and ginger. Sauté for about 1 minute until fragrant.
- Add the chopped green onion, julienned carrot, zucchini, and red bell pepper to the pot. Stir-fry for 3-4 minutes until the vegetables are slightly tender.
- Stir in the Korean chili powder, soy sauce, and fish sauce, mixing well to coat the vegetables with the spices.
- Pour in the chicken or vegetable broth and bring the mixture to a boil. Reduce heat and simmer for 5 minutes.
- Add the shrimp, squid, and mussels to the pot. Cook for an additional 5-7 minutes until the seafood is cooked through and mussels have opened.
- Season with salt and black pepper to taste.
- To serve, place a portion of noodles in a bowl and ladle the hot soup with seafood and vegetables over the noodles. Drizzle with sesame oil before serving.
