Ingredients

  • Korean wheat noodles - 150 grams
  • Shrimp - 100 grams, peeled and deveined
  • Squid - 100 grams, cleaned and sliced
  • Mussels - 100 grams, cleaned
  • Vegetable oil - 1 tablespoon
  • Garlic - 3 cloves, minced
  • Ginger - 1 tablespoon, minced
  • Green onion - 2 stalks, chopped
  • Carrot - 1 small, julienned
  • Zucchini - 1 small, julienned
  • Red bell pepper - 1/2, sliced
  • Korean chili powder (gochugaru) - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Fish sauce - 1 tablespoon
  • Chicken or vegetable broth - 500 ml
  • Salt - to taste
  • Black pepper - to taste
  • Sesame oil - 1 teaspoon

Steps

  1. Cook the Korean wheat noodles according to package instructions, drain, and set aside.
  2. In a large pot, heat the vegetable oil over medium heat and add the minced garlic and ginger. Sauté for about 1 minute until fragrant.
  3. Add the chopped green onion, julienned carrot, zucchini, and red bell pepper to the pot. Stir-fry for 3-4 minutes until the vegetables are slightly tender.
  4. Stir in the Korean chili powder, soy sauce, and fish sauce, mixing well to coat the vegetables with the spices.
  5. Pour in the chicken or vegetable broth and bring the mixture to a boil. Reduce heat and simmer for 5 minutes.
  6. Add the shrimp, squid, and mussels to the pot. Cook for an additional 5-7 minutes until the seafood is cooked through and mussels have opened.
  7. Season with salt and black pepper to taste.
  8. To serve, place a portion of noodles in a bowl and ladle the hot soup with seafood and vegetables over the noodles. Drizzle with sesame oil before serving.
