Ingredients

  • Cooked rice - 300 grams (about 2 cups)
  • Pork belly (or pork shoulder) - 200 grams, thinly sliced
  • Gochujang (Korean red chili paste) - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Green onions - 2 stalks, chopped
  • Carrot - 1 small, diced
  • Bell pepper - 1 small, diced
  • Frozen peas - 100 grams
  • Eggs - 2, lightly beaten
  • Salt - to taste
  • Pepper - to taste
  • Cooking oil - 1 tablespoon

Steps

  1. In a bowl, mix the thinly sliced pork with gochujang, soy sauce, sesame oil, and minced garlic. Let it marinate for at least 10 minutes.
  2. Heat a tablespoon of cooking oil in a large skillet or wok over medium-high heat.
  3. Add the marinated pork to the skillet and cook for about 5-7 minutes, until browned and cooked through. Remove the pork and set it aside.
  4. In the same skillet, add diced carrot and bell pepper. Stir-fry for 3-4 minutes until they start to soften.
  5. Add the frozen peas and continue to stir-fry for another 2 minutes.
  6. Push the vegetables to one side of the skillet and add the beaten eggs to the empty side. Scramble the eggs until they are fully cooked.
  7. Add the cooked rice to the skillet, followed by the cooked pork, and chopped green onions. Stir everything together and cook for an additional 3-4 minutes, ensuring everything is heated through and well combined.
  8. Season with salt and pepper to taste, and serve hot.
