- Beef sirloin - 200 grams, thinly sliced
- Firm tofu - 150 grams, cubed
- Shiitake mushrooms - 100 grams, sliced
- Korean zucchini (or regular zucchini) - 1 medium, sliced
- Carrot - 1 medium, julienned
- Green onions - 2 stalks, chopped
- Garlic - 3 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Korean chili flakes (gochugaru) - 1 teaspoon
- Water - 750 milliliters
- Salt - to taste
- Pepper - to taste
- Sesame seeds - for garnish
Steps
- In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
- Add the sliced beef to the pot and cook until it begins to brown, about 3-4 minutes.
- Stir in the soy sauce and Korean chili flakes, mixing well to coat the beef.
- Pour in the water and bring the mixture to a boil.
- Once boiling, add the shiitake mushrooms, zucchini, and carrot. Reduce the heat to low and let it simmer for about 10 minutes.
- Gently add the cubed tofu and chopped green onions. Season with salt and pepper to taste, and simmer for an additional 5 minutes.
- Serve hot, garnished with sesame seeds and additional green onions if desired.
