Ingredients

  • Beef sirloin - 200 grams, thinly sliced
  • Firm tofu - 150 grams, cubed
  • Shiitake mushrooms - 100 grams, sliced
  • Korean zucchini (or regular zucchini) - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Green onions - 2 stalks, chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Korean chili flakes (gochugaru) - 1 teaspoon
  • Water - 750 milliliters
  • Salt - to taste
  • Pepper - to taste
  • Sesame seeds - for garnish

Steps

  1. In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing until fragrant, about 1 minute.
  2. Add the sliced beef to the pot and cook until it begins to brown, about 3-4 minutes.
  3. Stir in the soy sauce and Korean chili flakes, mixing well to coat the beef.
  4. Pour in the water and bring the mixture to a boil.
  5. Once boiling, add the shiitake mushrooms, zucchini, and carrot. Reduce the heat to low and let it simmer for about 10 minutes.
  6. Gently add the cubed tofu and chopped green onions. Season with salt and pepper to taste, and simmer for an additional 5 minutes.
  7. Serve hot, garnished with sesame seeds and additional green onions if desired.
