Ingredients

  • Cooked rice - 1 cup
  • Carrot - 1 small, finely diced
  • Zucchini - 1 small, finely diced
  • Mushrooms (shiitake or button) - 100 grams, finely chopped
  • Green onion - 2, chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Sesame seeds - for garnish

Steps

  1. In a large skillet, heat vegetable oil over medium heat.
  2. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the diced carrot, zucchini, and chopped mushrooms to the skillet. Stir-fry for 5-7 minutes until the vegetables are tender.
  4. Stir in the cooked rice, soy sauce, sesame oil, salt, and black pepper. Mix well to combine all ingredients and heat through for another 5 minutes.
  5. Remove from heat and fold in the chopped green onions.
  6. Serve the Jeon Bap hot, garnished with sesame seeds.
