Ingredients

  • Shirataki noodles - 200 grams
  • Beef sirloin, thinly sliced - 150 grams
  • Spinach - 100 grams
  • Bell pepper, thinly sliced - 1 medium (about 150 grams)
  • Carrot, julienned - 1 small (about 50 grams)
  • Mushrooms (shiitake or button), sliced - 100 grams
  • Garlic, minced - 2 cloves
  • Sesame oil - 1 tablespoon
  • Soy sauce (or tamari for gluten-free) - 2 tablespoons
  • Black pepper - to taste
  • Green onions, chopped - 2 stalks
  • Sesame seeds - 1 teaspoon

Steps

  1. Rinse the Shirataki noodles under cold water and drain. Then, boil them in water for 2-3 minutes, drain again, and set aside.
  2. Heat a large skillet or wok over medium heat and add sesame oil. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the sliced beef to the skillet and cook for 3-4 minutes until browned. Season with black pepper.
  4. Incorporate the sliced bell pepper, carrot, and mushrooms into the skillet, cooking for an additional 3-4 minutes until the vegetables are slightly tender.
  5. Add the spinach and Shirataki noodles to the skillet, followed by the soy sauce. Toss everything together and cook for another 2-3 minutes until heated through.
  6. Remove from heat and garnish with chopped green onions and sesame seeds before serving.
