Ingredients
- Wheat noodles - 200 grams
- Black bean paste (Chunjang) - 3 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Ginger - 1 teaspoon, minced
- Onion - 1 medium, diced
- Zucchini - 1 small, diced
- Carrot - 1 medium, diced
- Mushrooms (shiitake or button) - 100 grams, sliced
- Cucumber - 1 small, julienned (for garnish)
- Green onions - 2, chopped (for garnish)
- Soy sauce - 1 tablespoon
- Sugar - 1 teaspoon
- Water - 250 ml
- Salt - to taste
Steps
- Cook the wheat noodles according to the package instructions until al dente. Drain and set aside.
- In a large pan, heat the vegetable oil over medium heat. Add the minced garlic and ginger, sautéing until fragrant.
- Add the diced onion to the pan and cook until translucent, about 3-4 minutes.
- Stir in the diced zucchini, carrot, and sliced mushrooms. Cook for another 5-7 minutes, until the vegetables are tender.
- Push the vegetables to one side of the pan and add the black bean paste to the empty side. Cook the paste for 1-2 minutes until it darkens slightly, then mix it with the vegetables.
- Pour in the water, soy sauce, and sugar. Stir well and let the mixture simmer for about 5 minutes until slightly thickened.
- Taste and add salt if needed.
- To serve, place the cooked noodles into bowls and generously spoon the black bean sauce mixture over the top.
- Garnish with julienned cucumber and chopped green onions before serving.
