Ingredients

  • Wheat noodles - 200 grams
  • Black bean paste (Chunjang) - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Onion - 1 medium, diced
  • Zucchini - 1 small, diced
  • Carrot - 1 medium, diced
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Cucumber - 1 small, julienned (for garnish)
  • Green onions - 2, chopped (for garnish)
  • Soy sauce - 1 tablespoon
  • Sugar - 1 teaspoon
  • Water - 250 ml
  • Salt - to taste

Steps

  1. Cook the wheat noodles according to the package instructions until al dente. Drain and set aside.
  2. In a large pan, heat the vegetable oil over medium heat. Add the minced garlic and ginger, sautéing until fragrant.
  3. Add the diced onion to the pan and cook until translucent, about 3-4 minutes.
  4. Stir in the diced zucchini, carrot, and sliced mushrooms. Cook for another 5-7 minutes, until the vegetables are tender.
  5. Push the vegetables to one side of the pan and add the black bean paste to the empty side. Cook the paste for 1-2 minutes until it darkens slightly, then mix it with the vegetables.
  6. Pour in the water, soy sauce, and sugar. Stir well and let the mixture simmer for about 5 minutes until slightly thickened.
  7. Taste and add salt if needed.
  8. To serve, place the cooked noodles into bowls and generously spoon the black bean sauce mixture over the top.
  9. Garnish with julienned cucumber and chopped green onions before serving.
