Ingredients

  • Cauliflower - 300 grams

  • Fresh sashimi-grade tuna - 100 grams
  • Cucumber - 1 medium, julienned
  • Carrot - 1 medium, julienned
  • Radish - 50 grams, julienned
  • Avocado - 1 small, sliced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 teaspoon
  • Rice vinegar - 1 tablespoon
  • Korean red pepper flakes (gochugaru) - 1 teaspoon
  • Sesame seeds - 1 tablespoon
  • Green onions - 2, chopped
  • Salt - to taste

Steps

  1. Begin by preparing the cauliflower rice. Cut the cauliflower into florets and pulse in a food processor until it resembles rice grains.
  2. Steam the cauliflower rice for about 5-7 minutes until tender. Once done, set aside to cool.
  3. While the cauliflower is steaming, prepare the seafood. Slice the salmon and tuna into bite-sized pieces and set aside.
  4. Julienne the cucumber, carrot, and radish, then set them aside in separate bowls.
  5. In a small bowl, mix together the soy sauce, sesame oil, rice vinegar, gochugaru, and salt to create a dressing.
  6. Once the cauliflower rice has cooled, divide it between two bowls.
  7. Arrange the sliced salmon, tuna, cucumber, carrot, radish, and avocado attractively over the cauliflower rice.
  8. Drizzle the dressing over the arranged seafood and vegetables.
  9. Sprinkle sesame seeds and chopped green onions on top for garnish.
