- Brown rice flour - 100g
- Tapioca starch - 50g
- Water - 200ml
- Egg - 1 large
- Green onions - 100g, chopped
- Shrimp - 100g, peeled and deveined
- Squid - 100g, cleaned and sliced into rings
- Mussels - 100g, cleaned
- Salt - 1/2 tsp
- Black pepper - 1/4 tsp
- Vegetable oil - 3 tbsp
Steps
- In a mixing bowl, combine the brown rice flour, tapioca starch, water, egg, salt, and black pepper. Whisk until smooth.
- Add the chopped green onions, shrimp, squid, and mussels to the batter and mix gently to combine.
- Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat.
- Pour half of the batter mixture into the skillet, spreading it evenly to form a pancake.
- Cook for about 3-4 minutes until the bottom is golden brown, then flip and cook for another 3-4 minutes on the other side.
- Remove the pancake from the skillet and repeat the process with the remaining batter mixture, adding more oil as needed.
- Cut the pancakes into wedges and serve hot with a dipping sauce of soy sauce and vinegar.
