Haemul Pajeon

Ingredients

  • Brown rice flour - 100g
  • Tapioca starch - 50g
  • Water - 200ml
  • Egg - 1 large
  • Green onions - 100g, chopped
  • Shrimp - 100g, peeled and deveined
  • Squid - 100g, cleaned and sliced into rings
  • Mussels - 100g, cleaned
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Vegetable oil - 3 tbsp

Steps

  1. In a mixing bowl, combine the brown rice flour, tapioca starch, water, egg, salt, and black pepper. Whisk until smooth.
  2. Add the chopped green onions, shrimp, squid, and mussels to the batter and mix gently to combine.
  3. Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat.
  4. Pour half of the batter mixture into the skillet, spreading it evenly to form a pancake.
  5. Cook for about 3-4 minutes until the bottom is golden brown, then flip and cook for another 3-4 minutes on the other side.
  6. Remove the pancake from the skillet and repeat the process with the remaining batter mixture, adding more oil as needed.
  7. Cut the pancakes into wedges and serve hot with a dipping sauce of soy sauce and vinegar.
