Ingredients

  • Short-grain rice - 100 grams
  • Water - 800 ml
  • Mixed seafood (shrimp, squid, mussels) - 150 grams
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Green onion - 2 stalks, chopped
  • Sesame oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Soy sauce - 1 tablespoon (optional)
  • Seaweed (dried) - for garnish

Steps

  1. Rinse the short-grain rice under cold water until the water runs clear, then drain.
  2. In a pot, combine the rinsed rice and water. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 20 minutes or until the rice is soft and has absorbed most of the water.
  4. In a separate pan, heat the sesame oil over medium heat. Add the minced garlic and ginger, and sauté until fragrant, about 1 minute.
  5. Add the mixed seafood to the pan and cook until they are just opaque, about 3-4 minutes.
  6. Add the cooked rice mixture to the seafood pan and stir well to combine. Season with salt, black pepper, and soy sauce if using.
  7. Add the chopped green onions and stir for another minute. If the porridge is too thick, add a little more water to reach your desired consistency.
  8. Serve hot, garnished with dried seaweed.
