  • Carrot - 30 grams, finely chopped
  • Green onion - 30 grams, finely chopped
  • Bell pepper - 30 grams, finely chopped
  • Vegetable oil - 1 tablespoon

Steps

  1. In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined and slightly frothy.
  2. Add the finely chopped carrot, green onion, and bell pepper to the egg mixture and stir to combine.
  3. Heat a non-stick skillet over medium-low heat and add the vegetable oil, spreading it evenly across the pan.
  4. Pour a quarter of the egg mixture into the skillet, tilting the pan to spread it evenly. Cook for about 2-3 minutes until the edges start to set.
  5. Using a spatula, gently roll the omelette towards the edge of the pan, then push the rolled omelette to the far side of the skillet.
  6. Add another quarter of the egg mixture to the empty side of the skillet, ensuring it flows under the rolled omelette. Cook for another 2-3 minutes.
  7. Repeat the rolling and adding process until all the egg mixture is used and you have a layered rolled omelette.
  8. Once fully cooked, remove from the skillet and let cool for a minute before slicing into bite-sized pieces.
  9. Serve warm as a delightful breakfast or snack.
