Ingredients
- Eggs - 4 large
- Milk - 30 ml
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Carrot - 30 grams, finely chopped
- Green onion - 30 grams, finely chopped
- Bell pepper - 30 grams, finely chopped
- Vegetable oil - 1 tablespoon
Steps
- In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined and slightly frothy.
- Add the finely chopped carrot, green onion, and bell pepper to the egg mixture and stir to combine.
- Heat a non-stick skillet over medium-low heat and add the vegetable oil, spreading it evenly across the pan.
- Pour a quarter of the egg mixture into the skillet, tilting the pan to spread it evenly. Cook for about 2-3 minutes until the edges start to set.
- Using a spatula, gently roll the omelette towards the edge of the pan, then push the rolled omelette to the far side of the skillet.
- Add another quarter of the egg mixture to the empty side of the skillet, ensuring it flows under the rolled omelette. Cook for another 2-3 minutes.
- Repeat the rolling and adding process until all the egg mixture is used and you have a layered rolled omelette.
- Once fully cooked, remove from the skillet and let cool for a minute before slicing into bite-sized pieces.
- Serve warm as a delightful breakfast or snack.
