Ingredients

  • Silken tofu - 200 grams
  • Nutritional yeast - 2 tablespoons
  • Turmeric powder - 1/2 teaspoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Carrot - 1 small, finely chopped
  • Spinach - 1 cup, chopped
  • Green onion - 2 tablespoons, chopped
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Olive oil - for frying

Steps

  1. In a blender, combine the silken tofu, nutritional yeast, turmeric powder, salt, and black pepper. Blend until smooth and creamy.
  2. In a skillet, heat olive oil over medium heat. Add the chopped carrot and sauté for about 2 minutes until slightly softened.
  3. Add the chopped spinach and green onion to the skillet. Sauté for another 2-3 minutes until the spinach is wilted.
  4. Pour the blended tofu mixture over the sautéed vegetables, spreading it evenly in the pan. Cook for about 5 minutes until the edges start to set.
  5. Using a spatula, gently lift one edge of the tofu mixture and roll it away from you, creating a log shape. Continue rolling until the entire mixture is rolled up.
  6. Let it cook for another 2-3 minutes to firm up. Remove from the pan and slice into bite-sized pieces.
  7. Drizzle with soy sauce and sesame oil before serving.
