Ingredients
- Silken tofu - 200 grams
- Nutritional yeast - 2 tablespoons
- Turmeric powder - 1/2 teaspoon
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
- Carrot - 1 small, finely chopped
- Spinach - 1 cup, chopped
- Green onion - 2 tablespoons, chopped
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Olive oil - for frying
Steps
- In a blender, combine the silken tofu, nutritional yeast, turmeric powder, salt, and black pepper. Blend until smooth and creamy.
- In a skillet, heat olive oil over medium heat. Add the chopped carrot and sauté for about 2 minutes until slightly softened.
- Add the chopped spinach and green onion to the skillet. Sauté for another 2-3 minutes until the spinach is wilted.
- Pour the blended tofu mixture over the sautéed vegetables, spreading it evenly in the pan. Cook for about 5 minutes until the edges start to set.
- Using a spatula, gently lift one edge of the tofu mixture and roll it away from you, creating a log shape. Continue rolling until the entire mixture is rolled up.
- Let it cook for another 2-3 minutes to firm up. Remove from the pan and slice into bite-sized pieces.
- Drizzle with soy sauce and sesame oil before serving.
