Ingredients

  • Eggs - 4 large
  • Chicken broth - 500 ml
  • Cauliflower rice - 150 g
  • Garlic - 2 cloves, minced
  • Green onions - 2 stalks, chopped
  • Sea salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. In a medium pot, heat the olive oil over medium heat.
  2. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Pour in the chicken broth and bring it to a gentle simmer.
  4. Add the cauliflower rice and cook for 5 minutes until tender.
  5. In a bowl, whisk the eggs with sea salt and black pepper until well combined.
  6. Slowly pour the egg mixture into the pot while stirring gently to create ribbons of egg.
  7. Continue to cook for another 2-3 minutes until the eggs are fully cooked.
  8. Remove from heat and stir in the chopped green onions.
