Ingredients

  • Cooked jasmine rice - 1 cup
  • Firm tofu - 200 grams
  • Nutritional yeast - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Green onion - 2 stalks, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 1/2 cup
  • Salt - to taste
  • Black pepper - to taste
  • Red pepper flakes - 1/2 teaspoon (optional)
  • Sesame seeds - 1 tablespoon (for garnish)

Steps

  1. In a blender or food processor, combine the firm tofu, nutritional yeast, soy sauce, sesame oil, vegetable broth, minced garlic, salt, and black pepper. Blend until smooth and creamy.
  2. In a medium saucepan over medium heat, pour the tofu mixture and cook, stirring frequently for about 10 minutes until slightly thickened.
  3. Add the chopped green onion and red pepper flakes (if using) to the tofu mixture, and stir to combine. Cook for an additional 2 minutes.
  4. Divide the cooked jasmine rice into two bowls. Spoon the tofu mixture over the rice, spreading it evenly.
  5. Garnish with sesame seeds and additional chopped green onions if desired. Serve warm.
