- Cooked jasmine rice - 1 cup
- Firm tofu - 200 grams
- Nutritional yeast - 2 tablespoons
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Green onion - 2 stalks, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 1/2 cup
- Salt - to taste
- Black pepper - to taste
- Red pepper flakes - 1/2 teaspoon (optional)
- Sesame seeds - 1 tablespoon (for garnish)
Steps
- In a blender or food processor, combine the firm tofu, nutritional yeast, soy sauce, sesame oil, vegetable broth, minced garlic, salt, and black pepper. Blend until smooth and creamy.
- In a medium saucepan over medium heat, pour the tofu mixture and cook, stirring frequently for about 10 minutes until slightly thickened.
- Add the chopped green onion and red pepper flakes (if using) to the tofu mixture, and stir to combine. Cook for an additional 2 minutes.
- Divide the cooked jasmine rice into two bowls. Spoon the tofu mixture over the rice, spreading it evenly.
- Garnish with sesame seeds and additional chopped green onions if desired. Serve warm.
