Ingredients

  • Short grain rice - 1 cup
  • Water - 1 1/4 cups
  • Firm tofu - 200 grams, crumbled
  • Nutritional yeast - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Green onions - 2, finely chopped
  • Carrot - 1 small, grated
  • Zucchini - 1 small, grated
  • Garlic - 2 cloves, minced
  • Black sesame seeds - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the short grain rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a saucepan, combine the soaked rice and 1 1/4 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and water is absorbed.
  3. While the rice is cooking, prepare the tofu custard. In a bowl, combine the crumbled tofu, nutritional yeast, soy sauce, sesame oil, chopped green onions, grated carrot, grated zucchini, minced garlic, salt, and black pepper. Mix until well combined.
  4. Transfer the tofu mixture into a heatproof bowl or a small steamer dish and smooth the top with a spatula.
  5. Prepare a steamer setup by boiling water in a pot and placing a steaming rack or basket above it. Place the bowl with the tofu mixture in the steamer and cover. Steam for about 15 minutes or until the tofu is firm and set.
  6. Once the rice and tofu custard are ready, fluff the rice with a fork and divide it between two bowls. Carefully unmold the tofu custard on top of the rice.
  7. Sprinkle black sesame seeds over the dish and garnish with additional chopped green onions if desired. Serve hot.
