  • Cauliflower rice - 200 grams
  • Eggs - 4 large
  • Milk - 60 ml
  • Shredded mozzarella cheese - 100 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Green onions - 2 tablespoons, chopped
  • Cherry tomatoes - 100 grams, halved
  • Olive oil - 1 tablespoon
  • Red pepper flakes - 1/2 teaspoon (optional)
  • Fresh basil leaves - for garnish

Steps

  1. Preheat the oven to 200°C (392°F).
  2. In a large bowl, combine the cauliflower rice, 1 egg, and 1/4 teaspoon of salt. Mix well until a dough forms.
  3. Spread the cauliflower mixture evenly on a baking sheet lined with parchment paper, shaping it into a pizza crust. Bake for 15 minutes until golden.
  4. In a separate bowl, whisk together the remaining 3 eggs, milk, 1/4 teaspoon salt, black pepper, and red pepper flakes (if using) until well combined.
  5. Remove the crust from the oven and sprinkle the shredded mozzarella cheese evenly over it.
  6. Pour the egg mixture over the cheese, then top with chopped green onions and halved cherry tomatoes.
  7. Return the pizza to the oven and bake for an additional 10-12 minutes, or until the egg is set and the top is slightly golden.
  8. Remove from the oven, let it cool for a couple of minutes, then garnish with fresh basil leaves before slicing and serving.
