- Eggs - 4 large
- Milk - 60 ml
- Shredded mozzarella cheese - 100 grams
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Green onions - 2 tablespoons, chopped
- Cherry tomatoes - 100 grams, halved
- Olive oil - 1 tablespoon
- Red pepper flakes - 1/2 teaspoon (optional)
- Fresh basil leaves - for garnish
Steps
- Preheat the oven to 200°C (392°F).
- In a large bowl, combine the cauliflower rice, 1 egg, and 1/4 teaspoon of salt. Mix well until a dough forms.
- Spread the cauliflower mixture evenly on a baking sheet lined with parchment paper, shaping it into a pizza crust. Bake for 15 minutes until golden.
- In a separate bowl, whisk together the remaining 3 eggs, milk, 1/4 teaspoon salt, black pepper, and red pepper flakes (if using) until well combined.
- Remove the crust from the oven and sprinkle the shredded mozzarella cheese evenly over it.
- Pour the egg mixture over the cheese, then top with chopped green onions and halved cherry tomatoes.
- Return the pizza to the oven and bake for an additional 10-12 minutes, or until the egg is set and the top is slightly golden.
- Remove from the oven, let it cool for a couple of minutes, then garnish with fresh basil leaves before slicing and serving.
