- Green onions - 2, finely chopped
- Carrot - 1 small, julienned
- Zucchini - 1 small, julienned
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Vegetable oil - 1 tablespoon
- Red chili flakes - 1/2 teaspoon (optional)
Steps
- Cook the spaghetti or fettuccine according to the package instructions until al dente. Drain and set aside.
- In a mixing bowl, whisk together the eggs, milk, soy sauce, sesame oil, salt, and pepper until well combined.
- In a medium-sized pan, heat vegetable oil over medium heat. Add the julienned carrot and zucchini, and sauté for about 3-4 minutes until slightly softened.
- Pour the egg mixture into the pan with the vegetables. Stir gently to combine and reduce the heat to low. Cook for about 8-10 minutes, stirring occasionally, until the eggs are just set but still creamy.
- Add the cooked pasta to the egg and vegetable mixture, tossing gently to combine everything evenly. Cook for an additional 2-3 minutes until heated through.
- Garnish with chopped green onions and red chili flakes if desired. Serve warm.
