  • Spaghetti or fettuccine - 200 grams
  • Eggs - 4 large
  • Milk - 100 ml
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Green onions - 2, finely chopped
  • Carrot - 1 small, julienned
  • Zucchini - 1 small, julienned
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Vegetable oil - 1 tablespoon
  • Red chili flakes - 1/2 teaspoon (optional)

Steps

  1. Cook the spaghetti or fettuccine according to the package instructions until al dente. Drain and set aside.
  2. In a mixing bowl, whisk together the eggs, milk, soy sauce, sesame oil, salt, and pepper until well combined.
  3. In a medium-sized pan, heat vegetable oil over medium heat. Add the julienned carrot and zucchini, and sauté for about 3-4 minutes until slightly softened.
  4. Pour the egg mixture into the pan with the vegetables. Stir gently to combine and reduce the heat to low. Cook for about 8-10 minutes, stirring occasionally, until the eggs are just set but still creamy.
  5. Add the cooked pasta to the egg and vegetable mixture, tossing gently to combine everything evenly. Cook for an additional 2-3 minutes until heated through.
  6. Garnish with chopped green onions and red chili flakes if desired. Serve warm.
