- Spaghetti - 150 grams
- Eggs - 3 large
- Soy sauce (Kosher) - 2 tablespoons
- Sesame oil - 1 tablespoon
- Green onions - 2, finely chopped
- Carrot - 1 small, julienned
- Spinach - 100 grams, blanched
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Water - 250 milliliters
- Butter - 1 tablespoon
Steps
- Cook the spaghetti according to package instructions until al dente, then drain and set aside.
- In a mixing bowl, whisk together the eggs, soy sauce, sesame oil, salt, and black pepper until well combined.
- In a small saucepan, melt butter over medium heat and sauté the carrots for about 2-3 minutes until slightly softened.
- Add the blanched spinach and half of the chopped green onions to the pan, and cook for an additional 1-2 minutes.
- Pour the egg mixture into the saucepan and stir gently to combine with the vegetables, then reduce the heat to low.
- Cover the saucepan and let the mixture steam for about 5-7 minutes, or until the eggs are just set but still fluffy.
- In a large bowl, combine the cooked spaghetti with the egg and vegetable mixture, tossing gently to combine.
- Serve hot, garnished with the remaining green onions.
