Ingredients

  • Spaghetti - 150 grams
  • Eggs - 3 large
  • Soy sauce (Kosher) - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Green onions - 2, finely chopped
  • Carrot - 1 small, julienned
  • Spinach - 100 grams, blanched
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Water - 250 milliliters
  • Butter - 1 tablespoon

Steps

  1. Cook the spaghetti according to package instructions until al dente, then drain and set aside.
  2. In a mixing bowl, whisk together the eggs, soy sauce, sesame oil, salt, and black pepper until well combined.
  3. In a small saucepan, melt butter over medium heat and sauté the carrots for about 2-3 minutes until slightly softened.
  4. Add the blanched spinach and half of the chopped green onions to the pan, and cook for an additional 1-2 minutes.
  5. Pour the egg mixture into the saucepan and stir gently to combine with the vegetables, then reduce the heat to low.
  6. Cover the saucepan and let the mixture steam for about 5-7 minutes, or until the eggs are just set but still fluffy.
  7. In a large bowl, combine the cooked spaghetti with the egg and vegetable mixture, tossing gently to combine.
  8. Serve hot, garnished with the remaining green onions.
